Ok, Ok. So, this isn’t what’s for lunch. Really, it’s what’s for breakfast…but you could eat it for lunch, too.
It’s packed with protein, and takes little to no time to prepare.
Lemon Raspberry Overnight Oats
Yield: 1 serving
1/2 cup oats
1/4 cup plain yogurt
1/4 cup milk
1 teaspoon vanilla extract
2 tablespoons lemon curd (or lemon spread)
1/4 cup raspberries (frozen work great!)
Stir together the oats, sugar, yogurt, milk and vanilla extract until well combined.
Alternate lemon, oat mixture, and berries in a container. Pinterest tells me it’s supposed to be in a mason jar. We make larger batches of these oats in a large container, rather than having to wash a bajillion mason jars. You find whatever works for you.
Cover and leave in the fridge overnight (or at least 8 hours). Eat cold with a hot cup of caffeinated life giving elixir of your choice.
Oats will keep well in the fridge, so go ahead, make enough for the whole week!
