Basil Chicken Salad

“What’s for lunch?” Wednesday – 10/21/15

Why did the chicken cross the road?  To get into your belly!

Carb it up!  Put it between some fresh bread!

Carb it down! Put it in a wrap!

Go carb free!  Serve on top of a green salad!

Or just eat it with a fork!

Basil Chicken Salad

1/4 cup nonfat mayonnaise
2 Tbsp. fresh lemon juice
2 tsp. dijon mustard
1/4 tsp. hot sauce
1/8 tsp. white pepper
3 cups chopped cooked chicken breast meat (cook it in the crockpot for easy shredding!)
1/2 cup chopped celery
1/4 cup chopped green onions
1/4 cup shredded fresh basil
1 1/2 Tbsp. pine nuts (optional)

Combine first 5 ingredients and stir well. Combine chicken, celery, green onions and basil in a medium bowl. Add the mayonnaise mixture and toss gently.
