Cucumber Avo Salad

This easy salad will remind you of sunnier, warmer days. Fresh flavours combine to make a refreshing bite to eat. Add in some fresh mozzarella to boost protein content.

1/2 large English cucumber
1/2 cup diced tomato or cherry tomatoes
1 tbsp thinly sliced green onion (or to taste)
1/2 avocado
1 tsp. fresh lemon juice (optional)
~ 1.5 tsp good-quality balsamic vinegar
sea salt and fresh ground black pepper to taste
